Sous Vide. Salt and pepper steak, put in bag, add herbal/garlic butter, vac & seal. 59°C, give or take a few hours. Take out of bag, save liquid, dry steak, sear steak quickly in hot steel pan. Remove from pan, pour in liquid from bag (careful!), reduce, add creme fraiche.
