I’ll start, I was in culinary school and after i graduated I wanted to learn on my own because I personally didn’t like dealing with the other students. Despite that, I think the best lesson i learned was the one class where my chef forbid us from using any seasoning unless it was required to make a dish. This weeded out students who hid bad cooking because heavy seasoning or sauces and required us to use other methods to add flavor. This honestly helped me more than any class i that course. BONUS: knowing when to use Oil and when to use butter. If your dish takes too long to cook don’t use butter too early because it will burn, use a very light oil. submitted by /u/ItsJustJosiah
